Pasta with Broccoli, Cheese and Pine Nuts

Ingredients

  • 400 g orecchiette pasta
  • Salt
  • 500 g broccoli florets
  • 1 onion
  • 70 g pine nuts
  • 2 tbsp olive oil
  • 50 ml Vegetable broth
  • 3 tbsp white wine vinegar
  • black pepper (freshly ground)
  • 70 g freshly grated Parmesan

Instructions

    Cook the pasta in plenty of salted water until al dente. Wash the broccoli and cook it in salted water for 5-6 minutes as well. Drain both and set aside.

    Peel and dice the onion. Toast the pine nuts in a pan until golden yellow. Remove them, then sauté the onion in the same pan with oil. Deglaze with vegetable broth and bring to a quick boil.

    Combine the pasta, broccoli, vinegar and toasted pine nuts, season and toss briefly. Fold in the cheese, plate in a bowl and serve.
