Pasta with Bell Pepper, Cherry Tomatoes and Green Salsa

Ingredients

  • 2 handfuls parsley (about 60 g)
  • 2 anchovy fillets (jar)
  • 2 Tbsp capers (jar)
  • 6 tbsp Olive oil
  • 1 tsp white wine vinegar
  • pepper (ground)
  • 500 g penne
  • Salt
  • 2 red bell peppers
  • 150 g cherry tomatoes
  • 1 Garlic clove
  • 2 tbsp olive oil
  • pepper (ground)

Instructions

    Wash the parsley, pat dry, remove leaves and finely chop. Drain anchovies with capers, chop and mix with parsley and oil. Season with vinegar and pepper.

    Cook penne in salted water al dente.

    Wash bell peppers, halve, core and slice into strips. Wash tomatoes and quarter them. Peel garlic and finely chop. Sauté peppers in hot olive oil for 2-3 minutes. Add garlic and tomatoes, season with salt and pepper. Toss drained penne (add 2-3 tbsp pasta water if desired) and serve on plates.
