Ingredients
- 400 g penne pasta
- Salt
- 1 bunch basil leaves
- 3 tbsp pine nuts (fat‑free roasted)
- 2 garlic cloves (peeled)
- 1 tsp sea salt (to taste)
- 30 g Parmesan
- 20 g young pecorino
- 70 ml best olive oil
- pepper (ground)
- basil for serving
Instructions

Cook the pasta according to package instructions in plenty of salted water.

Blend basil, pine nuts, garlic and half the oil with a hand blender; gradually add salt, cheese and remaining oil as needed, seasoning with pepper.

Drain the pasta and serve on plates topped with fresh basil.
