Pasta with Asparagus and Cheese

- 1 untreated lemon
- 500 g Green Asparagus
- Salt
- 1 tsp sugar
- 500 g wide noodles
- 2 tbsp olive oil
- 1 tbsp honey
- Pepper (freshly ground)
- 100 ml whipping cream
- 80 g pecorino

Wash the lemon hot, grate about half of its zest and squeeze out the juice. Wash the asparagus, peel the lower third and cut off the tough ends. Cut into roughly 5 cm long diagonal pieces. Boil in salted water with 2 tbsp lemon juice and sugar for about 6 minutes until firm, then drain and reserve the cooking liquid.

Fill the asparagus stock with water to about 2 l and bring to a boil again. Cook the noodles al dente in it. While the pasta cooks, heat oil in a large pan. Add the asparagus and sauté briefly. Drizzle honey over it and glaze by tossing. Season with salt, pepper, lemon zest and juice, then add cream. Grate the pecorino finely.

Drain the noodles and toss them while still wet under the asparagus. If desired, stir in some reserved cooking liquid. Taste again and serve on plates. Sprinkle pecorino on top and serve immediately.
