Ingredients

  • 100 g Arugula
  • 2 cloves garlic
  • 80 g pine nuts
  • 100 g grated Parmesan
  • 150 ml olive oil
  • Salt
  • Pepper
  • 400 g tagliatelle

Instructions

    Wash and dry the arugula for the pesto. Set aside a few leaves for garnish. Peel and halve the garlic cloves. Toast the pine nuts in a dry pan until golden brown; set aside 2 tablespoons. Blend the arugula, garlic, toasted pine nuts, and 80 g Parmesan. Gradually add olive oil until a smooth paste forms. Season with salt and pepper to taste.

    Cook the tagliatelle in boiling salted water al dente. Drain immediately and toss with two thirds of the pesto. Plate the pasta, spoon the remaining pesto on top, then sprinkle with extra Parmesan and pine nuts and garnish with fresh arugula.
