Ingredients

  • 500 g spaghetti
  • arugula
  • Parmesan (or Pecorino)
  • walnut kernels
  • 100 g Arugula
  • 1 clove garlic
  • 50 g walnut kernels (or pine nuts)
  • 50 g goat hard cheese (Parmesan or Pecorino), grated
  • 150 ml olive oil
  • 2 tsp coarse salt

Instructions

    For the pesto, blend all ingredients in a blender or mortar and pestle.

    Cook pasta in lightly salted water until al dente. Mix pasta with pesto and serve on plates. Add arugula and Parmesan shavings, top each portion with a few walnut kernels, and serve.
