Beef Tenderloin with Asian Noodles

- 600 g beef tenderloin (center cut, well trimmed)
- 2 garlic cloves (peeled)
- Nuoc Cham sauce
- peanut oil
- 3 chili peppers
- 3 spring onions
- 400 g asian noodles
- Salt

Cook the noodles according to package instructions and drain. Wash, trim, and slice the spring onions into thin rings. Rinse the chili peppers, slit them lengthwise, and remove the seeds.

Slice the beef with a sharp knife into 1 cm thick pieces, lightly flatten each piece with the flat hand, and rub with garlic. Heat 3 tbsp oil in a pan over high heat and sear the beef on both sides until just browned. Transfer to a shallow bowl and drizzle each piece with 1 tbsp Nuoc Cham sauce.

Deglaze the pan with 2 tbsp hot water, bring to a boil, and quickly toss the noodles in it. Season with salt, spring onions (reserve some for garnish), and chili. Slide the hot noodles onto a plate, arrange the beef on top, and pour the extracted beef juices over them. Garnish with spring onion rings and serve.
