The pasta pan with vegetables from Spoonsparrow is a quick and fiber-rich pasta dish!
Ingredients
- 400 g whole wheat pasta
- Salt
- 1 Zucchini
- 1 tbsp Olive Oil
- 250 g green beans (frozen)
- 200 g low-fat cream cheese preparation
- 0.5 bunch Parsley
- 2 tbsp pumpkin seeds (15 g each)
Instructions

Cook pasta in plenty of boiling salted water according to package instructions until al dente. Set aside 2 ladles of pasta cooking water, drain the rest and let noodles dry.

While the pasta cooks, wash and quarter the zucchini lengthwise, cutting into about 0.5 cm thick pieces. Heat oil in a pan, sauté zucchini and beans over medium heat for 6–8 minutes. Add noodles, cream cheese and reserved pasta water, mixing thoroughly. Season with a little salt.
