Ingredients

  • 150 g shiitake mushrooms (or oyster mushrooms)
  • 2 Spring Onions
  • 1 red bell pepper
  • 1 Garlic clove
  • 1 chicken breast fillet (120 g)
  • 3 tbsp oil
  • Salt
  • Pepper (freshly ground)
  • 250 g mie noodles (or other Asian noodles)

Instructions

    Rub the mushrooms with kitchen paper and slice them into thick slabs. Trim the roots and wilted outer leaves from the spring onions, wash them, and cut the tender green parts into fine spirals. Wash the bell pepper, quarter it, remove the seeds and membranes, then dice it into small cubes. Peel the garlic and finely chop it.

    Rinse the chicken breast cold, pat dry, and slice across the grain into very thin strips.

    Heat the oil. Sauté the chicken strips, mushrooms, onions, and garlic over medium heat, turning frequently for about 3 minutes. Season with salt and pepper, then cover and keep warm until the noodles are cooked.

    Prepare the noodles according to package instructions. Drain, let them drain, mix with the mushrooms, vegetables, and chicken, and serve on preheated plates.
