Ingredients
- 250 g macaroni
- 600 g oyster mushrooms (cleaned, sliced into thin strips)
- 1 clove garlic
- 1 onion (finely chopped)
- 1 small zucchini (thinly sliced lengthwise with a vegetable peeler)
- 5 tbsp olive oil
- 4 tomatoes (sliced thin)
- 0.5 bunch parsley (leaves finely chopped)
- 150 g mascarpone
- 400 ml milk
- 4 eggs
- 2 tsp herbs de Provence (dried)
- Salt
- pepper (ground fresh)
- 80 g Parmesan (freshly grated)
Instructions

Cook the pasta in plenty of salted water until al dente, drain, rinse with cold water and set aside.

Sauté mushroom strips briefly over high heat with a little oil, then add onions and press in garlic. Remove from heat, stir in mascarpone and milk, whisk in eggs, season with parsley, herbs, salt and pepper.
