Ingredients

  • 500 g rigatoni
  • 2 kg ripe tomatoes
  • 2 chili peppers
  • 2 Garlic cloves
  • 2 tbsp chopped parsley
  • Olive oil (extra virgin)
  • Salt
  • freshly grated Pecorino

Instructions

    Wash the tomatoes, blanch them, peel, halve, core and cut into small pieces. Peel the garlic and finely chop it. Wash the chili peppers, remove seeds and finely chop them.

    Cook the pasta in plenty of salted water until al dente. In the meantime

    Heat 3 tbsp oil in a pan and quickly sauté the garlic and chili. Add the tomatoes and simmer for about 5 minutes over medium heat. Season with salt. Drain the pasta and add it to the tomato sauce, mix well and then reheat the pasta and sauce together on high heat. Remove from the stove and stir in the parsley. Sprinkle with Pecorino if desired and serve immediately.
