Passionfruit Chocolate Tower

- 200 g dark chocolate couverture
- 100 g nut nougat
- 6 passion fruits
- 200 ml cold whipping cream
- 2 egg whites
- 60 g sugar
- powdered sugar (for dusting)
- pear slice (for garnish)
- starfruit (for garnish)

Chop the chocolate and cut the nougat into small pieces. Melt both over a double boiler, stirring well. Spread the melted chocolate thinly and evenly on parchment paper and let it cool. Use a round cutter to cut 12 circles and chill them in the refrigerator before removing from the parchment.

Halve the passion fruits, scrape out the pulp, and strain through a fine sieve. Whip the cream until stiff peaks form and fold in about three‑quarters of the passion fruit puree. Beat the egg whites with sugar until soft peaks form, then gently fold into the mixture.

Stack three chocolate circles with a quarter of the passionfruit mousse on each to create towers. Drizzle the remaining puree around the towers. Dust with powdered sugar and garnish with pear slices and starfruit or other exotic fruits as desired. Serve immediately.
