Blueberry Pancakes

Ingredients
- 250 g flour
- 2 tsp Baking powder
- 0.5 tsp Salt
- 3 tbsp sugar
- 2 Eggs
- 500 ml Buttermilk
- 2 tbsp liquid butter
- 200 g Blueberries
- cinnamon (for dusting)
- sugar (for dusting)
- butter (for cooking)
Instructions

Combine flour, baking powder, salt and sugar in a mixing bowl; add egg yolks, buttermilk and butter, stirring only until dry ingredients are moistened. Rest for about 30 minutes. Meanwhile beat egg whites into stiff peaks and fold in blueberries (reserve some for garnish).

Heat a lightly greased pan with a bit of butter and cook small pancakes one at a time, leaving space when pouring batter so they rise. Keep finished pancakes warm at 80 °C in the oven.

Serve with reserved blueberries and dust with cinnamon and sugar to taste.
