Parma Ham Cheese Sandwich

- 1 large firm tomato (Roma or plum)
- 4 Basil stems
- 2 tsp ketchup
- 200 g Cream cheese
- Salt
- Pepper
- 6 slices sandwich bread
- 50 g Parma ham (thinly sliced)
- 50 g goat cheese (in thin slices)
- 3 tbsp pesto (green)

Briefly blanch the tomato for a few seconds, cool it in ice water, peel, quarter, deseed and dice into small cubes. Wash half of the basil, dry by shaking, finely chop, then mix with the tomato cubes, ketchup, salt, pepper, and 2/3 of the cream cheese.

Toast the sandwich slices and arrange them side by side on a cutting board. Spread two slices with the remaining cream cheese and top with goat cheese. Distribute the cream cheese mixture over two more slices, smooth it out, and add Parma ham. Brush the last slices with pesto, place the pesto-side down onto the goat cheese slices; this sandwich slice is then placed atop the ham slice. The finished sandwich is cut diagonally in half and served garnished with basil.
