Ingredients
- 4 paprika peppers (red, orange, yellow)
- 4 tomatoes
- 1 Red Onion
- 100 g green olives
- 1 handful coriander leaves
- 4 tbsp sherry vinegar
- Salt
- black pepper (freshly ground)
- a pinch sugar
- 4 tbsp olive oil

Preheat the oven to 200°C (400°F) with upper and lower heat. Line a baking sheet with parchment paper. Wash, clean, and cut the peppers into 2–3 cm wide strips. Spread them on the sheet and bake for about 10 minutes. Remove and let cool.

Wash the tomatoes, remove stems, and cut into wedges. Peel the onion and slice finely. Drain the olives. Rinse the coriander leaves, shake dry, and pluck the leaves.

Whisk together vinegar, salt, pepper, sugar, and oil. Toss the peppers, tomatoes, onions, and olives in a bowl with the dressing and season to taste. Sprinkle with coriander before serving.
