Ingredients

  • 4 tbsp olive oil
  • 2 zucchini (green and yellow)
  • 2 Eggplants
  • 6 tomatoes
  • 2 Garlic cloves
  • 2 tbsp lemon juice
  • 2 tbsp freshly chopped thyme
  • Salt
  • Pepper

Instructions

    Preheat the oven to 180°C fan. Lightly oil a baking dish.

    Wash the zucchini and eggplant, trim ends, slice crosswise into thin rounds or half-moons. Wash tomatoes, cut off stems, slice finely. Peel garlic and mince finely. Mix with remaining oil, lemon juice, thyme, salt, and pepper.

    Arrange the vegetables in fan shape in the oiled baking dish, drizzling each layer with a little lemon oil. Bake for about 30 minutes.

    Carefully remove, plate on dishes, and serve.
