- 600 g tomatoes
- 1 Shallot
- 1 Garlic clove
- olive oil
- 1 tbsp Tomato Paste
- Salt
- Pepper (freshly ground)
- 2 red bell peppers
- 2 yellow bell peppers
- 1 tbsp capers
- sugar
- 0.5 bunch Basil

Blanch the tomatoes, shock them in cold water, peel, quarter, seed and dice the flesh into small cubes. Pass the remnants through a fine sieve to collect the juice. Peel and finely chop the shallot and garlic; sauté in a pot with 2 tbsp hot oil until translucent. Add the tomatoes and tomato paste, pour in the collected juice, season with salt and pepper, and simmer gently over medium heat for about 20 minutes.

Meanwhile wash the bell peppers, halve them, remove seeds and white membranes, and slice into thin strips. In a hot pan, sear the strips with 2 tbsp oil until browned; add capers to the sauce and let it thicken for about 5 minutes. Taste with a pinch of sugar, plate the dish, and garnish with sliced basil before serving.
