Ingredients

  • 4 red bell peppers
  • 1 onion
  • 1 Garlic clove
  • 60 g sun-dried tomatoes (in oil)
  • 6 anchovies
  • 1 Tbsp freshly chopped thyme
  • 100 g breadcrumbs
  • 50 g grated Parmesan
  • 6 tbsp Olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Preheat the oven to 200°C fan.

    Wash, halve, and clean the bell peppers, leaving the stems. Peel and finely dice the onion and garlic. Chop the sun-dried tomatoes finely. Dice the anchovies and mix them with thyme, breadcrumbs, parmesan, tomatoes, onion, garlic, and 4 tbsp oil. Season with salt and pepper and fill the pepper halves. Place in a greased dish and bake in the oven for about 30 minutes until golden brown. Garnish with arugula if desired.
