Paprika Meatloaf

Ingredients
- 2 onions
- 750 g ground beef
- 2 Eggs (size M)
- 40 g freshly grated breadcrumbs
- Salt
- ground pepper
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 2 tbsp olive oil
- 2 Garlic cloves
- 100 g sheep cheese
- 4 dried tomatoes
- 2 tbsp chopped herbs (e.g., thyme and rosemary)
- some rosemary (and thyme sprigs)
- baking paper
Instructions

Peel onions and finely dice. Mix ground beef with eggs, breadcrumbs, onions, salt, and pepper. Quarter bell peppers, clean, rinse, and dice small. Heat olive oil in a pan. Briefly sauté the diced peppers.

Peel garlic and slice thinly. Crumble sheep cheese into small pieces. Chop tomatoes finely. Add peppers, sheep cheese, tomatoes, and herbs to the meat mixture and blend into a smooth dough.

Line a loaf pan (preferably with lid) with baking paper. Transfer the meat dough into the pan. Smooth the top with a spatula and arrange herb sprigs on top. Cover with lid or foil. Bake in preheated oven at 200°C (gas: level 3-4, convection: 180°C) for 45–50 minutes.

Drain excess fat. Remove the loaf from the pan and discard baking paper. Slice the meatloaf into portions.
