Ingredients

  • 3 yellow bell peppers
  • 250 g green olives (optional with paprika filling)
  • 2 cloves garlic
  • 1 lemon (juice)
  • 100 ml olive oil
  • 1 tsp sugar
  • Salt
  • black pepper (freshly ground)

Instructions

  1. 1.

Preheat the oven to grill mode.

  2. 2.

Wash the bell peppers, halve them, remove seeds, stems and white membranes, and place them skin-side up on a parchment-lined baking sheet. Grill in the oven for about 10 minutes until the skins blister and begin to char. Remove from the oven and cover with a damp kitchen towel. Let cool, then peel off the skins, cut into pieces, and combine with olives in a bowl.

  3. 3.

Peel and press the garlic. Mix together with lemon juice, olive oil, sugar, salt, and pepper, and stir into the vegetables. Cover and refrigerate for at least 2 hours to marinate.

  4. 4.

Transfer to a jar if desired and take to a picnic. Serve with a fresh cheese dip if you like.
