Pasta with Blue Cheese and Walnuts

Ingredients
- 400 g spaghetti
- Salt
- 1 white onion
- 150 g bacon cubes
- walnut oil
- 80 g chopped walnut kernels
- 2 tbsp freshly chopped parsley
- Salt
- Pepper (freshly ground)
- 100 g Gorgonzola

Cook the spaghetti in plenty of salted water until al dente and drain. Reserve a cup of pasta cooking water. Meanwhile, peel and finely chop the onion.

Heat 2 tbsp oil in a pan and sauté the bacon with the onion. Stir in the walnut kernels, cook briefly, then add the drained noodles. Mix well and fry together for a short time. Season with salt and pepper and stir in an additional 1–2 tbsp walnut oil.

Add the parsley to the pasta and crumble the Gorgonzola over it. Stir quickly, optionally adding 2–3 tbsp of reserved pasta water if the noodles have absorbed too much liquid. Serve immediately on plates or bowls.
