Ingredients
- 750 g red bell peppers
- 1 onion
- 20 g butter
- 1 Garlic clove
- 2 tsp Paprika powder
- 500 ml vegetable broth (instant or carton)
- 2 tsp vinegar
- 100 g heavy cream
- Salt
- pepper (ground)
- Watercress
Instructions

Halve the peppers, remove seeds, wash and roughly chop them.

Peel the onion, finely dice it and sauté in butter. Peel the garlic and squeeze it into the pan.

Add broth and vinegar, then let everything simmer for 30 minutes.

Season with paprika powder, salt, and pepper, then puree the soup. Lightly whip the cream.

Serve the soup on plates and garnish with a swirl of cream and watercress.
