Ingredients

  • 2 red bell peppers
  • 1 onion
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 1 l vegetable broth
  • Salt
  • freshly ground pepper
  • 1 yellow bell pepper
  • 150 g zucchini
  • 2 Tomatoes
  • 50 g sheep cheese
  • a little dill

Instructions

    Quarter the bell peppers, clean, rinse and peel with a vegetable peeler. Dice the peppers.

    Peel the onion and garlic and dice them finely.

  3. 3.

    Heat the olive oil. Briefly sauté the onion, garlic and peppers in it. Add the broth and simmer covered for 15 minutes.

    Blend in a blender, season with salt and pepper, let cool slightly. Strain through a fine sieve.

    Quarter the yellow bell pepper, clean and rinse. Wash the zucchini and tomatoes, chop them small and add to the soup.

    Taste again and chill thoroughly. Grate the sheep cheese and sprinkle over the soup. Serve garnished with dill.
