Paprika Soup with Savory Basil Fritters

Ingredients
- 1 onion
- 1 Garlic clove
- 4 red bell peppers
- butter
- 3 sprigs thyme
- 500 ml vegetable broth
- 250 g heavy cream
- 1 tbsp Crème fraîche
- 20 basil leaves
- 1 egg
- 75 ml dry white wine
- 90 g flour
- 5 tbsp olive oil

Peel and finely chop the onion and garlic. Wash the peppers, halve them, remove the white membranes and seeds, and dice into small cubes. Heat 1 tbsp butter in a pot and sauté the onions, garlic, thyme, and peppers. Add the broth, bring to a boil, cover, and simmer for about 15 minutes. Stir in the cream and crème fraîche, then puree the soup. Pass through a sieve, season with salt, pepper, and cayenne pepper, and taste.

Wash and pat dry the basil leaves. In a bowl whisk the egg and wine together, stir in the flour, and season with a pinch of salt.

Heat oil in a pan. Dip the basil leaves into the batter, place them in the hot pan, and fry until golden brown on both sides. Remove and drain on paper towels.

To serve, bring the soup to a gentle boil, ladle into bowls, and top with the basil fritters. Garnish with fresh basil leaves if desired.
