Papaya Sorbet

Ingredients
- 2 Papayas (about 350 g)
- 3 limes (juice)
- 80 g cane sugar
- lime zest (for garnish)
Instructions

Halve papayas lengthwise and use a spoon to remove the seeds. Peel the fruit halves. Add 300 ml water to a small pot.

Add the cane sugar.

Turn the stove to high heat. Bring the sugar water to a boil.

After about 5 minutes, reduce to a syrup that is not too thick.

Cut the papaya halves into small pieces and place them in a mixing bowl.

Add the sugar syrup and about 100 ml lime juice.

Blend everything with an immersion blender.

Taste the puree with additional lime juice if desired.

Transfer the puree to a metal bowl, cover, and place it in a freezer.

Freeze for 4 hours.

Stir the mixture briefly every hour with a wooden spoon.

Shape the papaya sorbet into balls or nuggets as desired.

Serve in dessert bowls garnished with lime zest.
