Ingredients

  • 2 Bell peppers
  • 5 tomatoes
  • 2 Garlic cloves
  • 3 tbsp basil (cut into strips)
  • 8 slices white bread
  • 300 g parmesan cheese
  • Salt
  • Pepper
  • olive oil
  • red wine vinegar

Instructions

    Lay parchment paper on a baking sheet and lightly grease with olive oil. Then place 1/2 cm high mounds (about 6 cm wide) on it. Bake in a preheated oven at 200°C fan for as long as needed until the cheese on top becomes slightly browned and the strands melt together, but do not let the cheese fully melt. Remove and allow to cool.

    Peel and finely chop garlic. Wash bell peppers, halve them, remove seeds, and cut into fine strips. Wash tomatoes and slice them. Cut white bread into bite‑size cubes. Mix tomatoes, peppers, and bread.

    Prepare a vinaigrette with 4 tbsp olive oil, 2 tbsp red wine vinegar, 2 tbsp water, salt, pepper, basil, and garlic. Pour the vinaigrette over the vegetables and bread and mix well. Adjust seasoning if needed. Arrange the bread salad with parmesan chips on a plate and serve immediately.
