Panna Cotta with Berry Mirror

Panna Cotta with Berry Mirror by Spoonsparrow: The sauce makes it truly delicious!
Ingredients
- 6 sheets of white gelatin
- 1 Vanilla bean
- 500 ml heavy cream
- 3 tbsp raw cane sugar
- 250 g mixed berries (strawberries, currants and raspberries)
- 1 tbsp Lemon Juice
- 4 mint leaves (for garnish)
Instructions

Soak the gelatin in cold water. Split the vanilla bean lengthwise. Add the vanilla bean, cream and sugar to a pot and bring to a boil.

Remove from heat and stir in the well-extracted gelatin. Let cool for about 10 minutes, then remove the vanilla bean again. Rinse four glasses with cold water, fill them with the vanilla cream and refrigerate covered for at least 4 hours.

Wash, clean and chop the berries. Set aside 4 tbsp for garnish. Puree the rest of the berries with lemon juice.

Strain the berry puree through a sieve if desired, then spread it over the panna cotta before serving. Top with the reserved berries. Garnish the panna cotta with mint before serving.
