Chai Tea Cookies

Juicy cookies packed with spice power – the Chai tea biscuits from Spoonsparrow!
Ingredients
- 100 g almond flour
- 100 g wheat flour type 1050
- 0.5 tsp cinnamon
- 0.25 tsp ground fennel seeds
- 1 pinch turmeric powder
- 1 pinch clove powder
- 1 pinch freshly grated nutmeg
- 1 pinch ground cardamom
- 1 pinch ginger powder
- 1 pinch pepper
- 1 pinch Vanilla powder
- 4 eggs
- 110 g powdered sugar (from raw cane sugar)
Instructions

Sift almond flour and wheat flour into a bowl, add spices and mix. Beat eggs with powdered sugar for about 5 minutes until creamy. Gradually fold in the almond flour mixture until a thick batter forms.

Shape dough into small balls (about 1 cm diameter) using damp hands, place on parchment-lined baking sheet, and flatten each ball slightly.

Bake cookies at 150 °C (convection 130 °C; gas: level 1–2) for 15–20 minutes in preheated oven. Remove, lift from sheet with parchment, and let cool.
