Ingredients
- 1 grapefruit
- 1 orange
- 3 mandarins
- 50 g feta
- 30 g mixed herbs (dill, coriander, mint)
- 1 handful American pistachios (≈30 g)
- 1 Avocado
- 2 tbsp olive oil
- 1 tbsp Maple Syrup
- 1 tsp sharp mustard
- Salt
- Pepper
Instructions

Peel the grapefruit, orange and 2 mandarins and slice them. Crumble the feta. Wash, dry shake and tear the herbs. Finely chop the pistachios.

Halve the avocado, remove pit and skin, then cut each half lengthwise again into slices. Coat the avocado slices with pistachios, pressing lightly to adhere.

Squeeze juice from the remaining mandarin and whisk with olive oil, maple syrup, mustard, a pinch of salt and pepper to make a dressing. Arrange the panko‑crusted avocado on plates with the prepared ingredients and drizzle with dressing.
