Ingredients
- 4 trout ca. 250 g (ready to cook)
- Salt
- black pepper (freshly ground)
- lime juice
- 4 stalks coriander leaves
- 3 tbsp Flour
- 2 Eggs
- 1 tsp coriander seeds
- 1 dried chili pepper
- 150 g rolled oats

Preheat the oven to 180°C fan-forced.

Rinse the trout inside and out thoroughly and pat dry. Season both sides with salt and pepper, then drizzle with lime juice. Place a stalk of coriander leaf in each cavity and coat the fish in flour. Dip into whisked eggs. Crush the coriander seeds with the chili pepper in a mortar and mix into the oats. Dredge the fish in this mixture and place on a baking sheet lined with parchment paper. Bake in the oven for 25-30 minutes until golden brown, turning once during cooking.
