Wittling with Fruity Celery

Ingredients

  • 2 Wittling fillets (about 250 g each)
  • 1 tbsp Lemon Juice
  • 1 tbsp butter
  • 3 organic oranges
  • 4 stalks celery
  • 1 tbsp Olive Oil
  • Salt
  • ground pepper

Instructions

    Season fish fillets with salt and pepper, then drizzle with lemon juice.

    Wash and trim celery; set aside some greens. Slice celery stalks into ~1 cm thick rounds.

    Peel oranges like an apple with a sharp knife, remove all white membranes, cut along the inner membranes to extract orange segments, catch the released juice, and squeeze one orange for extra juice.

    Blanch celery in boiling salted water for about 5 minutes, then drain and shock in ice water.

    Sear fish fillets in hot butter for about 3 minutes on each side, remove and keep warm.

    Add oil and orange juice to the pan, let reduce slightly, add celery, heat through, season with salt and pepper, then fold in orange segments and some celery greens. Plate with the fish fillets.
