Ingredients
- 400 g pasta strands
- Salt
- Pepper (freshly ground)
- 8 salmon fillets (≈80 g each, skinless and boneless)
- 300 ml heavy cream
- 2 tbsp Lime juice
- 3 tsp grated lime zest (organic lime)
- 2 tbsp butter
- 2 tsp lime peel (organic lime)
- 8 mint leaves

Cook the pasta in plenty of boiling salted water until al dente. Meanwhile, rinse the salmon fillets, pat dry with paper towels, and season with salt and pepper.

Bring the heavy cream to a simmer with salt, pepper, lime juice, and grated zest; reduce heat and let it gently bubble for 2–3 minutes. Heat butter in a skillet and sear the salmon fillets about 2 minutes per side until golden brown.

Drain the pasta (reserve some cooking water), then toss it with the cream sauce, adding a splash of reserved water if the sauce thickens too much. Season to taste with salt and pepper. Plate the seared salmon on top of the noodles and garnish with lime peel and mint leaves. Serve immediately.
