Ingredients

  • 450 g sweet potatoes
  • Salt
  • 2 onions
  • 2 Garlic cloves
  • 500 g pork (e.g., from the neck)
  • 3 tbsp vegetable oil
  • pepper (ground)
  • Sweet Paprika Powder
  • chili peppers
  • 2 thyme sprigs

Instructions

    Peel and cut the sweet potatoes into halves or quarters, then slice. Blanch in boiling salted water for about 2 minutes, drain and set aside. Peel and dice the onions and garlic. Wash the pork, pat dry, and cut into bite‑sized pieces. In a large pan, sear the pork in hot oil on all sides until crisp. Season with salt, pepper, paprika, and chili. Remove from the pan and set aside. Add the remaining oil to the pan and sauté the onion and garlic cubes in the drippings. Wash the thyme, shake dry, strip leaves, and add them with the sweet potatoes and pork to the pan. Cook everything for 5–7 minutes, turning occasionally.
