Sea Bass with Oatmeal Coating

Ingredients
- 640 g sea bass fillet (4 sea bass fillets)
- 30 g Whole wheat flour (2 tbsp)
- 2 Eggs
- 20 g whole grain breadcrumbs (2 tbsp)
- 1 tsp curry powder
- 100 g oatmeal
- Salt
- Pepper
- 3 tbsp olive oil
- 500 g zucchini (2 zucchinis)
- a splash lemon juice
Instructions

Rinse sea bass fillets under cold water and pat dry. Place flour on a shallow plate, whisk eggs in a deep dish. Mix breadcrumbs with curry powder and oatmeal in another deep dish.

Season fish with salt and pepper and coat in flour. Then dip through the eggs and dredge in the oatmeal mixture.

Heat 2 tbsp oil in a non‑stick pan. Fry fish over low heat for 5–6 minutes on each side until golden brown.

Meanwhile wash, trim and slice zucchini lengthwise into thin strips. Heat remaining oil in a pan. Sauté zucchini over medium heat for 3–4 minutes. Season with salt, pepper and lemon juice and serve with the fish on four plates.
