- 4 stonefish fillets (or steak fillets)
- 1 lemon (juice)
- Salt
- Pepper (freshly ground)
- 400 g shiitake mushrooms
- 2 Spring Onions
- 1 Shallot
- 4 tbsp olive oil
- 2 tbsp chopped parsley

Rinse the fish, pat dry and drizzle with lemon juice, then season with salt and pepper. Clean the mushrooms and slice thinly. Wash the spring onions, trim and cut into fine rings. Peel and finely chop the shallot. Heat 2–3 tbsp oil in a pan and sauté the shallot until translucent. Add the spring onion rings and mushrooms, cook for 5–7 minutes while turning, then season with salt and pepper. In another pan, heat remaining oil and fry the fish for 2–3 minutes per side. Plate the fish together with the mushroom mixture and sprinkle with parsley before serving.
