- 3 fresh garlic cloves
- 250 g Cherry Tomatoes
- 2 sprigs Basil
- 2 sprigs oregano
- 4 swordfish steaks (about 220 g each)
- Salt
- ground pepper
- 2 tbsp olive oil
- 150 ml dry white wine
- 1 tbsp capers
Instructions
-
1.
Peel and finely dice the onion and garlic. Wash, trim, and halve the tomatoes. Rinse the herbs, shake dry, pluck leaves, and chop the basil.
-
2.
Rinse the swordfish, pat dry, season with salt and pepper, and sear in a hot pan with oil on both sides for a short time. Remove from the pan and sauté onion and garlic 1-2 minutes. Deglaze with wine, add tomatoes, and simmer gently for about 5 minutes. Add herbs and capers, season again, place the fish into the sauce, and let it cook in the sauce for another 5 minutes over low heat, spooning sauce over the fish occasionally. Taste and serve.
