Ingredients

  • 200 g Cherry tomatoes
  • 250 g fresh green snap beans
  • Salt
  • 500 g beef fillet
  • Pepper (freshly ground)
  • 6 tbsp Olive oil
  • 3 Garlic cloves
  • 1 tbsp freshly chopped rosemary

Instructions

    Wash the tomatoes and drain them. Wash the beans, trim the ends, and blanch in boiling salted water for 2‑3 minutes. Remove, shock with cold water, and drain well.

    Wash the beef fillet, pat dry, cut into four equal medallions, season with salt and pepper, and sear in a hot pan with 2 tbsp oil for 5‑7 minutes per side. Remove, wrap in foil, and rest.

    Peel the garlic, slice it, and sauté together with the tomatoes and beans in another pan using the remaining oil. Season with salt, pepper, and chopped rosemary, then simmer for 3‑5 minutes over medium heat.

    Arrange the vegetables on a preheated plate, placing one medallion atop each serving, and serve immediately.
