Ingredients

  • 500 g oyster mushrooms
  • 1 tbsp spelt whole‑grain flour
  • 2 Eggs
  • Salt
  • Pepper
  • 6 tbsp whole‑grain breadcrumbs
  • Vegetable oil for frying
  • 0.5 head Lollo Rosso lettuce
  • 2 tbsp chives, cut into rings

Instructions

    Clean the oyster mushrooms and gently flatten them with a rolling pin. Dust them lightly with flour. Beat the eggs in a bowl and season with salt and pepper. Dip each mushroom in the egg mixture, then coat thoroughly with breadcrumbs.

    Heat oil in a deep pan until hot. Fry the breaded mushrooms until golden brown. Drain on paper towels. Separate individual leaves of Lollo Rosso lettuce. Plate the fried mushrooms atop the salad greens and sprinkle with chopped chives before serving.
