Ingredients

  • Salt
  • 250 g penne (made from green peas)
  • 90 g arugula
  • 5 tbsp pitted black olives
  • 125 g mozzarella
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp aglio e olio seasoning mix
  • Pepper
  • paprika powder, hot
  • 2 tbsp seed mixture

Instructions

    Bring 2 liters of water to a boil, salt it, and cook the pea penne for 6 minutes. Then drain, rinse, and let cool.

    Meanwhile, clean and dry the arugula. Slice the olives into rounds. Drain the mozzarella and cut it into cubes.

    Whisk together olive oil, vinegar, salt, aglio e olio, pepper, and paprika to make a dressing. Add a splash of water if desired.

    Combine the pasta with arugula, top with olives, mozzarella, and seed mixture, then drizzle with the dressing.
