Ingredients
- 1.2 kg pumpkin flesh (from butternut squash)
- 8 sprigs thyme
- 0.5 tsp Coriander seeds
- Salt
- Pepper (freshly ground)
- 2 tbsp liquid butter
- 3 tbsp olive oil
- 1 tbsp honey

Preheat the oven to 200°C with top and bottom heat. Cut the pumpkin flesh into 3-4 cm cubes. Rinse the thyme, shake dry, pluck leaves from four sprigs and finely chop. Divide remaining sprigs into small pieces. Crush coriander in a mortar and mix with chopped thyme and pumpkin. Season with salt and pepper, add butter and oil, and combine well. Transfer to an ovenproof dish and bake for about 35 minutes until tender.

Drizzle the baked pumpkin with honey and serve garnished with leftover thyme.
