Ingredients
- 600 g medium potatoes
- 250 g fresh spinach leaves
- 2 onions
- 4 Garlic cloves
- 5 g oregano (0.25 bunch)
- 2 tbsp olive oil
- 400 g diced tomatoes (1 can)
- 300 ml Vegetable broth
- Salt
- Pepper
- nutmeg
Instructions

Wash and quarter the potatoes. Wash and rinse the spinach.

Peel the onions; dice one finely, cut the other into strips. Peel the garlic and finely dice it. Rinse the oregano, shake dry, and remove leaves from stems.

Heat oil in a pot. Sauté onion and garlic cubes over medium heat until translucent. Add spinach, tomatoes, and vegetable broth, season with salt, pepper, freshly grated nutmeg, and oregano, and simmer for about 10 minutes on low heat.

Place potatoes and onion strips in a baking dish, pour the spinach-tomato sauce over them. Bake in a preheated oven at 200 °C (fan 180 °C; gas: level 3) for approximately 45 minutes.
