Oven Potatoes with Mascarpone Cream

Ingredients
- 800 g potatoes
- 3 EL olive oil
- Cumin
- Salt
- Pepper
- 500 g mascarpone
- 6 EL lemon juice
- 1 pinch sugar
- 3 EL fruit vinegar
- 1 TL mustard
- 1 bundle radishes
- 200 g soy sprouts
- 1 box watercress

Wash potatoes thoroughly, brush off dirt, cut lengthwise in half. Grease a baking sheet well, place potato halves cut side up on the sheet, brush with remaining oil, sprinkle with salt and cumin. Bake in oven at 180°C (convection) for about 30 minutes. Mix mascarpone with salt, pepper, sugar, 5 EL lemon juice, 2 EL vinegar and mustard.

Wash radishes, shave into thin strips, fold under the mascarpone dip. Rinse soy sprouts in a colander with boiling water, cool, drain. Toss with 1 EL fruit vinegar, lemon juice, salt and a pinch of sugar. Serve potatoes with sprouts and dip, sprinkle chopped watercress on top.
