Oven Potatoes and Tomatoes with Meatballs

Ingredients
- 2 onions
- 1 tsp butter
- 500 g ground beef
- 1 egg
- 4 Tbsp breadcrumbs
- 5 tbsp finely chopped parsley
- 50 g grated Gouda cheese
- Salt
- pepper (ground)
- 1 tsp hot paprika powder
- 1 tsp cumin
- 1 tsp dried thyme
- 400 g Potatoes
- 400 g Tomatoes
- 1 tsp Sambal oelek
- 1 tsp tomato paste
- 200 ml vegetable broth
- 2 tbsp olive oil
- 4 tbsp creamy yogurt
- 3 tbsp Lemon juice

Peel and finely chop onions; sauté in hot butter until translucent, then mix with ground beef, egg, breadcrumbs, 2 tbsp chopped parsley, Gouda, a pinch of salt, pepper, hot paprika, cumin, and thyme. Form into 12 meatballs.

Peel potatoes and quarter lengthwise. Wash tomatoes and halve them.

Whisk sambal oelek and tomato paste with vegetable broth. Brush an oven tray with oil. Arrange meatballs and potatoes on the tray, drizzle with the broth mixture. Bake in the oven on the middle rack for about 30 minutes. After ~15 minutes add tomatoes and continue baking. Mix yogurt with lemon juice and remaining parsley; season with salt and pepper.

Remove tray from oven. Plate meatballs, tomatoes, and potatoes, and serve with the yogurt sauce.
