One-Pot Rice with Chicken and Bell Pepper

Ingredients
- 400 g chicken breast fillet
- 2 shallots
- 1 Garlic clove
- 1 red bell pepper
- 2 tbsp olive oil
- 250 g parboiled rice
- 400 ml Poultry broth
- 800 g diced tomatoes (canned)
- 120 g frozen peas
- Salt
- Pepper
- 1 tsp Sweet paprika powder

Pat chicken dry and cut into ~2 cm cubes. Peel and finely dice shallots and garlic. Clean, wash, and cut bell pepper into ~2 cm pieces.

Heat oil in a pot. Sear chicken over high heat for 3–4 minutes all sides, then remove. Add shallots and garlic to the pot. Cook over medium heat for 2–3 minutes until translucent. Add bell pepper and rice, cook together for 2–3 minutes. Deglaze with broth. Add diced tomatoes. Simmer on low heat for 10–15 minutes, stirring occasionally.

Return chicken to the pot and simmer for 5 more minutes. Stir in peas, season with salt, pepper, and paprika powder. Simmer another 3–4 minutes until everything is cooked through. Serve the one-pot rice on plates.
