- 2 kg eggplant tomatoes
- 3 Garlic cloves
- 4 sprigs thyme
- olive oil (for brushing)
- Salt
- Pepper (freshly ground)

Preheat the oven to 110°C (fan). Brush a baking tray with olive oil.

Wash the tomatoes, remove the stem ends and cut out the pulp (shortens drying time), place them on the tray. Halve the garlic cloves and sprinkle over the tomatoes with thyme.

Sprinkle the tomatoes with salt and dry in the oven for about 6‑8 hours, turning them every 30 minutes. The tomatoes should be flexible at the end, not too tough but also not overly wet.
