Fruity Spinach Curry

Ingredients
- 1 shallot (diced)
- 200 g young spinach
- 100 ml Vegetable broth
- 1 Banana
- 1 kaki
- 1 apple
- 1 chili pepper (finely chopped)
- 1 tbsp curry powder
- 1 tsp turmeric
- Salt
- Cayenne pepper
- a splash lemon juice
- 1 tbsp oil
- small flatbread
Instructions

Peel the banana and slice it. Wash and dry the spinach.

Wash the kaki and apple. Peel the apple, quarter it and slice thinly. Quarter the kaki and cut into strips.

Sauté the shallot cubes in oil, add bananas, kaki and apple, deglaze with vegetable broth and simmer briefly. Add spinach leaves, season with curry powder, turmeric, salt, cayenne pepper and lemon juice. Serve in bowls, sprinkle with chili and accompany with flatbread.
