Oven‑Baked Zucchini

The Oven‑Baked Zucchini from Spoonsparrow is a popular starter for both young and old!

Ingredients

  • 800 g Zucchini
  • 4 tbsp olive oil
  • 4 sprigs thyme
  • 1 pinch salt
  • black pepper
  • 4 tbsp pine nuts (15 g each)
  • 20 g Parmesan

Instructions

    Clean and wash the zucchini. Slice the zucchini with a large knife into about ½ cm thick, elongated slices.

    Brush the zucchini slices with 3 tbsp olive oil and place them on a baking sheet. Wash the thyme and shake it dry. Pull the leaves off the stems. Season the zucchini with salt and pepper and sprinkle with thyme. Bake in a preheated oven at 200 °C (convection 180 °C; gas: level 3) for about 15 minutes.

    Meanwhile, toast the pine nuts in a hot pan without oil over medium heat for 2 minutes, shaking the pan frequently so the nuts brown evenly. Transfer them to a plate and let cool. Grate the Parmesan.
