A quick and elegant Norwegian cod fillet served over a vibrant tomato‑garlic base, perfect for family dinners or entertaining guests.

Ingredients

  • 800 g Norwegian skrei fillet without skin and bones (winter cod)
  • 1 onion
  • 4 tomatoes
  • 3 cloves garlic
  • 0.3 tsp red chili flakes
  • 100 g tomato paste
  • 100 ml White wine
  • 100 ml olive oil
  • Sugar to taste
  • salt and pepper to taste
  • thyme leaves
  • bread for serving

Instructions

    Preheat the oven to 200 °C.

    Dice the onion, slice the tomatoes, and finely mince the garlic and chili.

    Sauté the onion and garlic in a little olive oil until they begin to brown.

    Add the chili and tomato paste, cooking briefly with the onions.

    Pour in the white wine and season the sauce with sugar, salt, and pepper.

    Place the skrei fillet together with the tomato slices in a heat‑proof dish.

    Bake the fish for about 20 minutes in the oven.

    Drizzle a glossy tomato sauce over the plates, add a splash of olive oil, and lay the fish on top of the sauce.

    Sprinkle chopped thyme over the dish and serve with bread.
