Ingredients

  • 100 g sun-dried tomatoes in oil (pickled)
  • 25 g olives (pitted, black)
  • 2 Garlic cloves
  • 1 tbsp pine nuts
  • 3 tbsp extra-virgin olive oil
  • 0.5 tsp Dried oregano
  • Salt
  • black pepper (freshly ground)
  • 40 g young Pecorino cheese (diced)
  • 1 tbsp finely sliced basil
  • 8 slices Ciabatta (Italian white bread)

Instructions

    Drain the sun-dried tomatoes, pat them dry and roughly chop them. Cut the olives into large pieces. Peel the garlic and coarsely mince it. Combine all ingredients in a bowl and pulse briefly. Gradually add the olive oil while seasoning with oregano, salt, and pepper.

    Toast the Ciabatta slices in a toaster or at high heat in an oven until golden brown, then spread the tomato mixture over them, sprinkle with Pecorino and basil, and serve immediately.
