Ingredients
- 2 very large red potatoes
- 300 g chicken breast fillet (1 chicken breast fillet)
- 1 egg
- 2 tbsp Italian herbs (frozen, chopped)
- 2 Tbsp grated Parmesan
- chili powder
- Salt
- Pepper
- oil for frying
- 200 g green beans (frozen)
- 1 tbsp White Wine Vinegar
- 1 tbsp grated Parmesan
- 4 Sage leaves

Wash the potatoes and cook in salted water for about 30 minutes. Halve them and scoop out one tablespoon of potato from each half, then mash. Separate the egg; mix yolk with Parmesan and herbs, season with chili, salt, and pepper. Fold in the mashed potato. Beat the egg white into a very stiff foam and fold it into the yolk mixture.

Cut the chicken breast into cubes, coat each cube in the batter, and briefly fry them until golden. Remove before they brown, place them into the hollowed potato halves, and bake at 120 °C for about 15 minutes. Meanwhile, cook the green beans in salted water, toss with a little vinegar, and plate. Serve the potatoes with the beans, garnished with sage leaves and sprinkled Parmesan.
